Curious as to how to make stock in the Instant Pot? I have a new post up on the blog that will guide you through how I make chicken stock in the Instant Pot! It's easy peasy and super fast to make in the Instant Pot. I use chicken stock in almost all my recipes and I find that homemade chicken stock just has that extra oomph compared to store-bought.

Bonus: you can freeze the stock for up to 3 months in individual ice cube trays or in the @soupercubes 1 cup container so you can have easy access to homemade stock on the reg!

• 3 shallots, peeled

First off, what is a “smoke point”? The smoke point is the temperature at which an oil starts to undergo what’s called “lipidperoxidation” and becomes rancid. That’s why it’s important to pay attention to an oil’s smoke point when cooking or baking. It is also a common misconception that you can’t sauté with olive oil. You definitely can but it would be best to use it at low to medium heats.

Below is a list of some of the good oils, benefits and heat toleration:

Avocado oil - great for high heats, good source of lutein, increases absorption of carotenoids.

Coconut oil (virgin) - great for low to medium heats, great source of MCTs
.
Walnut oil - great for low to medium heats, good source of omega-3s
.
Ghee butter - great for high heats, contains vitamin A, E & K.
.
Olive oil - great for low to medium heats, rich in polyphenols, great source of monounsaturated fat.

Minimize the use of these oils:

Soybean oil - shown in many studies to be highly inflammatory (due to high omega 6 saturation levels). Over 90% of soy is GMO = more pesticides. .

 Crêpes épaisses et moelleuses au beurre de noix de coco 🥰 ¼ tasse de farine de noix de coco • ¼ de cuillère à café d’épices pour tarte à la citrouille • ¼ de cuillère à thé de café • 2 cuillères à soupe de beurre de noix • 2 œufs légèrement battus • 1 blanc d'oeuf battu à la poêle • ½ c.  sirop d’érable • 3 c.  patate douce • 3 c. à table de lait d'amande.  Mélanger les ingrédients secs dans un bol.  Dans un bol séparé, mélanger le beurre de noix, les œufs, le sirop d'érable. Incorporer lentement le lait d'amande. Here is a powerful example of how not only switching to more whole foods will help your waist line but it will also help your overall health.

Don’t just take my word for it though.
A feb 2019 study published in the journal of the American medical association linked an increase in consumption of ultraprocessed foods w with a higher risk of all-cause mortality. (About a 14% high risk of all-cause mortality for every 10% increase in processed foods) .
A 2014 study by Public Health Nutrition found that people who cook at home 6-7 nights a week compared to those who eat out often, save on average 150 calories per day - that’s 1,050 calories a week! Not to mention the hydrogenated oils, fillers & added sodium you avoid by cooking your own food. .
Now, it’s not about being perfect! If most of your diet comes from whole foods and trusted brands that have minimally processed ingredients, there will still be room for fun foods when the occasion strikes or if you want a tasty treat.

If you’re not sure how to get started, here are some of my tips to start switching to a more unprocessed diet:
(1) stop drinking your calories (aside from low sugar kombuchas & high quality protein shakes), (2) make a habit of grocery shopping every week (3) start a meal prep routine (4) cook more dinners at home (5) try remaking some of you favorite desserts from scratch in the kitchen with healthier ingredients (6) read food labels and make sure you can understand what’s even in the minimally processed foods you choose.
