Last night’s Moroccan inspired spicy quinoa bowl is also today’s lunch!

Consisting of quinoa mixed with chickpeas, sultanas, chillis, coriander, cucumber, red pepper, spring onion and shredded spinach on a bed of mixed leaves served with some @aldiuk falafel, houmous and some butternut squash chunks I panfried in turmeric, cumin, sumac and salt 😋

In November I stopped eating meat and have since worked to reduce my intake of dairy, eggs and fish in a bid to follow more of a plant based diet and this is definitely going to be one of my newest staples 🙌🏻🙌🏻🙌🏻 #glutenfree #coeliac #plantbased #quinoabowl #lunchideas

When you can have pudding for breakfast 😋
This serves 4 portions and is perfect to bake and leave in the fridge for a few days for a quick breakfast or snack! I serve mine with dairy free, Greek style yoghurt
_______________________________________
▪️120g gluten free oats
▪️2 @nutribrex biscuits
▪️50g flaked or chopped almonds
▪️1 tsp cinnamon
▪️1/2 tsp nutmeg
▪️1 tsp @freeefoods baking powder
▪️1 tbsp brown sugar
▪️1 tsp vanilla extract
▪️3 tbsp maple syrup
▪️250ml @alpro almond milk
▪️100g strawberries
▪️100g frozen raspberries
(You can use any berries of your choice, frozen or fresh!)
_______________________________________
▪️Crush the nutribrex, then mix all the dry ingredients together
▪️In a separate bowl, mix the wet ingredients together
▪️Line a baking dish with some dairy free spread
▪️Even spread the berries in the dish
▪️Add the dry mixture on top of the berries, then pour the combined wet ingredients on top of it all
▪️Bake at 180C fan for 35 mins

This was one of those, 'let's use up all the random bits of veg in the fridge and hope the best' moments. I still need to find an easy lowfodmap satay sauce recipe for times like these so please let me know if you've got a recommendation!

INGREDIENTS

70g zucchini 
70g bokchoy

Peanut oil
Sea salt
Lime juice 
Peanuts to serve (optional)

Place the broccoli in a steamer. Add 1 tsp of peanut sauce to heated pan and toss through prawns. Add zucchini slices to pan once prawns are almost cooked. Add bokchoy to steamer with broccoli and place rice sachet in microwave (I used to just cook it from scratch and this has changed my life). Lately I’ve been looking back on old pictures, wondering if I’ll ever be the same girl again.

It’s no secret that my GI issues have completely taken over my life in every way: physically, mentally, socially. My anxiety is already sky high and I feel my depression creeping back in all the time.
.
I don’t want to isolate myself, but I’m scared of being in public or out with friends. Im scared of the pain, the embarrassment, the unknown.
.
It feels like this is how I will be forever. Logically, I know that’s not true, that’s the depression talking. But it’s been 4 months and I still have no answers. Meanwhile, I avoid social situations as much as possible and every day at work is a struggle to make it to 4:30 when I can go home.

I don’t want to live like this. I want to feel normal again. And not knowing when or if that will happen is petrifying.

オイスターソース炒めの豚肉は、すりおろしたしょうがとお酒、少量のお醤油、きび砂糖に漬け込み、片栗粉を揉み込んで焼いたので、柔らか~くなりました🎵

全体の味付けは、オイスターソースにお酒、醤油、きび砂糖です(^^) お昼に作った春雨スープには、すりごまをたっぷり足したら、いいアクセントになりました💓

Je déteste manger sucré le matin ... Les céréales, le pain confiture, les viennoiseries ... Beurk. J'ai faim 1h après, et peu d'aliments sucrés conviennent finalement pour le syndrome du côlon irrité.... une fois que l'on se le dit et qu'on le comprend, la sélection se fait d'elle-même... ! .

Bref. Quelle plaie car je tourne un peu en rond... Pas forcément le temps non plus de préparer qqch de très  élaboré les matins d'école, quant à la compréhension des uns et des autres ... Hum hum .... .

Please excuse my pyjamas and ugg boots 😂 This meal features on my page a LOT, but it is my go-to meal when I’m feeling like something super comforting, filling and hearty! Last nights dinner. Back on it after a little break for Easter and to try and work our what’s wrong with my stomach. I’m having to follow a low fodmap diet for 6-8 weeks to try and work out what foods hate me. It’s a massive challenge for me as it eliminates so many foods I eat every day but it will be worth it in the end. Turkey meatza made with 2% fat turkey mince, seasoned with salt and pepper, topped with tomato purée and half cheddar half mozzarella and baked in the oven, served with sweet potato fries from @aldiuk (5.5 syns) and salad with salad cream (1.5 tbsp) and lighter than light mayo (1.5) and lemon juice #swinstagram #sw #onplan #swinsta #positivethinking #fodmap #lowfodmap #slimmingworld #slimmingworldjourney #healthy

My first go at a smoothie bowl turned out a little runny 😂 gonna have to add less milk next time! Tasted yummy though! It included strawberries, a satsuma, biomel vanilla shot, almond milk and lacto free greek yoghurt. With some blueberries and coconut on top! 😍

Lots of people find dairy free milk easier to digest. Certain individuals are unable to break down lactose, the sugar contained in milk and dairy products. This is called “lactose intolerance” and causes bloating, flatulence, abdominal pain, cramps and diarrhoea. Plant milk can be as nutritious as dairy milk, however choose fortified dairy free milk to ensure adequate amount of calcium, iodine and B12 in your diet!
There are so many dairy free milk available such as soya, almond, cashew, oat, hazelnut, hemp and many more. I personally love the taste of hazelnut and oat milk. What is your favourite?

This morning I found myself wanting something sweet and savoury, that wasn’t too carb heavy but also had and egg 😂

I accepted my self made challenge and came up with this. The pancakes are made from a mix of ground almonds, coconut flour, egg and peanut butter - definitely needs perfecting but it did the job. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

I accepted my self made challenge and came up with this. The pancakes are made from a mix of ground almonds, coconut flour, egg and peanut butter - definitely needs perfecting but it did the job. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

I then had with turkey bacon and a fried egg 🍳 🥓 I also added some syrup to the pancakes to get that sweet fix! ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Breakfast ✅😍and today my little experiment paid off. porridge oats with stewed rhubarb (sweetened with stevia), coconut milk 🌴 🥥 🥛 and a sprinkle of cinnamon! If you are obsessed with breakfast (especially oatmeal) as much as me and you have not tried doing one of these 4 things, consider this your own personal PSA: 1. Adding shredded zucchini while it cooks 2. Using FULL fat coconut milk as the liquid 3. Topping everything with sea salt (trust me). 4. Allowing it to cool so that it thickens up 🤙🏼🤙🏼

1/2 cup oatmeal
1/2 cup full-fat coconut milk 
1/2 cup water 
1/2 medium zucchini shredded 
1 serving chocolate protein powder (I used @equip.foods) 
1 TB cacao, ➡️➡️➡️Cook oats in liquid, add shredded zucchini and allow some liquid to cook off for 5-10 minutes. And in protein powder, cacao and spices (I used cinnamon, cardamom and turmeric) and topped with banana, peanut butter and cacao nibs, bee pollen and SEA SALT 🧂

my typical “pretend like your life is together” dinner plate 🙋🏻‍♀️🙌🏼 leaving for chicago tomorrow morning ✈️ (which i couldn’t be more excited for- heyyyy @froyotofitness ✨), but i’m far from ready, per usual. my suitcase still isn’t fully unpacked from vacation, but that’s FINE because i’m currently eating this plate of allll the goods feeling like the purest vision of health 😂 that’s how this whole thing works, right??! RIGHT 💃🏻 happy tuesday lovers 💋

In short - they are fermentable carbohydrates that can be tough to digest for those with digestive disorders. Although FODMAPs do not cause digestive disorders they can exacerbate them in 2 ways 1) they can pull water into the small intestine which can lead to both bloating and/or diarrhea in an individual with a fast moving intestine 2) they are fermented quickly in the gut, which can cause gas and leads to stretching in your intestine (i.e BLOAT) in those with a sensitive GI system.

As you can see many FODMAPs actually happen to be nutrient-dense foods🍎🍌🍠🍞🧀🥪🥦 so therefore restricting them is not recommended unless a diagnosis has been made by your healthcare team and you’ve been recommended to try the LOW FODMAP diet approach for symptom management. To be sure that you still meet your daily nutritional requirements, it is important to work with a professional (ideally an RD! with experience in gut health and the Low FODMAP approach) before you eliminate or restrict foods from your diet.

Additionally, the goal is to be able to manage and improve symptoms with the *LEAST* amount of restriction possible. Often times people are sensitive to one or a few of the categories, but able to tolerate others.
