Okay can I be real for a minute?
I haven’t been posting too much lately, I guess you can say I’ve been MIA from my instagram.
Why? Well because I haven’t been eating great (or even semi-good tbh) I also haven’t been working out or hitting the gym like I used to. My diet pretty much consist of plenty take-outs, lots of cranberry vodkas and some frosted donuts 😂. I want to say it was a “break” because that’s how it started out.. but then I just completely fell off. Tried to get back on the wagon but I couldn’t. I convinced myself that I could get back into eating right whenever I wanted to but here I am, a month later and just now building up the willpower to start again. 
A healthy lifestyle isn’t a straight path. Sometimes it takes some falling off, sometimes we feel like we “quit” but as long as we start again then we can continue. Whether it’s a quick break or if that break turns into a month or even a year. It’s never too late to start again. 
To anyone that’s going through it, just know that you can start again. Make your next meal a better one, go for that walk, don’t indulge on that chocolate cake that you already purchased (note to self 😂). There’s no better time than now. It’s okay to not be perfect. 
I hope SOMEONE can relate to this in anyway. -

Rano uczelnia, trening, a potem znowu uczelnia i wielki kolos do którego przygotowywałam się ponad tydzień 😅 co oznacza, że druga połowa dnia była wolna od nauki a zaowocowało poświęceniem czasu w kuchni. Jestem pod wrażeniem tego co udało mi się dzisiaj przyrządzić 😎 Tak więc podzielę się również z wami przepisem 😋
Przed treningiem zjadłam jabłko, a po treningu byłam na kawce w Mc.
Po powrocie z uczelni 1 posiłek - kotleciki z ciecierzycy, ziemniaki i buraczki
Przepis na kotlety (wyszło mi 12 sztuk, na 2 porcje)
Podsmazylam cebulę, czosnek, marchew i cukinie. Do blendera dodałam jajko, zawartość patelni, ciecierzyce z puszki, 25g mąki orkisziwej, 15g mąki z cieciorki, sos sojowy, świeży lubczyk, paprykę wędzoną, ostrą, pieprz ziołowy, sól, płatki drożdżowe, 15ml oliwy z oliwek. Zblendowalam i nakładalam kotlety łyżka na rozgrzaną patelnię.

2 posiłek to naleśniki budyniowe z dodatkiem mieszanki na pancakes firmy @prozis. Podałam z twarozkiem z owocami leśnymi oraz polewą czekoladową zrobioną dosłownie z 3 składników. Żółtko, słodzik i kakao🔥😍 do tego mięta ❤️
Jestem zakochana w moim zielnik na parapecie, więc coś czuję że często będą robione zdjęcia właśnie na jego tle😂 świetnie maskują tą nie idealną pogodę za oknem!

🐣 Tortilla francesa de 2 huevos + 50gr de jamón cocido + 2 lonchas de mozzarella: bato los huevos ligeramente en un plato, los echo en una sartén pequeña y caliente ligeramente engrasada con unas gotitas de aceite. Añado el jamón york hecho en taquitos y cuando empieza a cuajar por debajo pongo las lonchas de mozzarella. Con una lengua de gato o espátula intento cerrar un poco los bordes de la tortilla y dejo que se haga a fuego medio-lento para cuajarla sin tener que darle la vuelta.

🍆 Taquitos de berenjena. Parto una berenjena mediana en taquitos y la hago a fuego medio en una sartén.

🌿 Guacamole para hacer un moji moji variado con todos los ingredientes.

Dzisiaj szybka, bardzo zdrowa i pyszna zupa 😋
Krem z białej fasoli @lestello_pl, przecieru @podravka_slovakia (mogą być ich pomidory z puszki lub świeże w sezonie) z dodatkiem bio oliwy @lidlpolska, soli himalajskiej @ekogram.pl oraz eko ziół i przypraw @darynatury.pl (imbir, zioła prowansalskie, kardamon, pieprz) ❤
Dla siebie robię w wersji bardzooooo ostrej z papryką chilli lub pieprzem cayenne 🔥
Obłędnie dobra i bardzo sycąca 🤩😋
Wystarczy ugotować namoczoną uprzednio fasolę, dodać składniki, doprawić, chwilkę gotować, zmiksować i gotowe. Można posypać natką pietruszki, kolendrą, słonecznikiem, siemieniem lnianym itp.
Polecam z domowymi grzankami z dobrego pieczywa, np. chleba żytniego na zakwasie 👌 Grzanki najlepiej zrobić w piekarniku.

Taco Tuesday CFC Style 🔥🥑🍅⠀

Not your average "health food" because CRUSHers aren't average.⠀
.⠀
makes about 4 servings ⠀
Ingredients:⠀
4 large sweet potatoes, or yams ⠀
fresh ground black pepper, to taste⠀
2 Tbsps olive or avocado oil⠀
1 tsp garlic powder⠀
1 lb. lean grass fed ground beef, or turkey ⠀
1 white/yellow onion, diced⠀
2-3 garlic cloves, minced⠀
1/4 cup chipotle peppers in adobo sauce⠀
1 cup frozen organic corn, thawed or fresh 1 head of corn shred from its cob⠀
1 tsp chili powder⠀
1 tsp ground cumin ⠀
1 tsp dried oregano⠀
1 tsp paprika⠀
1 (15 oz. jar) diced tomatoes, with juice⠀
15 oz. black beans, drained and rinsed if using canned ⠀
sea salt to taste ⠀
Extra toppings: sliced avocado, halved cherry tomatoes, organic sour cream or plain Greek yogurt, shredded cheese, fresh chopped parsley or cilantro, lime wedges, etc.⠀
⠀
Instructions: ⠀
Preheat the oven to 425 degrees f. and line a large baking sheet (or two) with parchment paper or silicone baking mats.⠀
⠀
Cut the sweet potatoes into 1/2 inch fries, evenly as shown and place them into a large bowl.⠀
⠀
Sprinkle fries with pepper and garlic powder, then drizzle with oil. Toss well to get all of your fries nicely coated.⠀
⠀
Arrange in a single layer, with some space in between (so they can crisp up), on the baking sheets and bake for 20 to 25 minutes, flipping once during roasting time.⠀
⠀
Meanwhile, heat a large (lidded) skillet over medium heat then add in your beef, onions and garlic. Cook, stirring frequently for about 6-7 minutes, or until meat starts to brown while breaking up the meat. ⠀
Add in seasonings, chipotle peppers, corn, black beans and diced tomatoes then gently stir to combine. Reduce heat to low, cover with a lid and simmer for 20 minutes to allow flavors to develop and chilli to thicken. Taste test, and add a sprinkle of sea salt if desired.⠀
⠀
Sprinkle fries with sea salt when they come out of the oven.

Not your average "health food" because CRUSHers aren't average.⠀

makes about 4 servings ⠀
Ingredients:⠀
4 large sweet potatoes, or yams ⠀
fresh ground black pepper, to taste⠀
2 Tbsps olive or avocado oil⠀
1 tsp garlic powder⠀
1 lb. lean grass fed ground beef, or turkey ⠀
1 white/yellow onion, diced⠀
2-3 garlic cloves, minced⠀
1/4 cup chipotle peppers in adobo sauce⠀
1 cup frozen organic corn, thawed or fresh 1 head of corn shred from its cob⠀
1 tsp chili powder⠀
1 tsp ground cumin ⠀
1 tsp dried oregano⠀
1 tsp paprika⠀
1 (15 oz. jar) diced tomatoes, with juice⠀
15 oz. black beans, drained and rinsed if using canned ⠀
sea salt to taste ⠀
Extra toppings: sliced avocado, halved cherry tomatoes, organic sour cream or plain Greek yogurt, shredded cheese, fresh chopped parsley or cilantro, lime wedges, etc.⠀

Instructions: ⠀
Preheat the oven to 425 degrees f. and line a large baking sheet (or two) with parchment paper or silicone baking mats.⠀

Cut the sweet potatoes into 1/2 inch fries, evenly as shown and place them into a large bowl.⠀

Sprinkle fries with pepper and garlic powder, then drizzle with oil. Toss well to get all of your fries nicely coated.⠀

Arrange in a single layer, with some space in between (so they can crisp up), on the baking sheets and bake for 20 to 25 minutes, flipping once during roasting time.⠀

Meanwhile, heat a large (lidded) skillet over medium heat then add in your beef, onions and garlic. Cook, stirring frequently for about 6-7 minutes, or until meat starts to brown while breaking up the meat. ⠀
Add in seasonings, chipotle peppers, corn, black beans and diced tomatoes then gently stir to combine. Reduce heat to low, cover with a lid and simmer for 20 minutes to allow flavors to develop and chilli to thicken. Taste test, and add a sprinkle of sea salt if desired.⠀

Sprinkle fries with sea salt when they come out of the oven.

Super Easy Shrimp Stir-fry🍤😋 ⠀

makes 2 servings⠀
Ingredients:⠀
1 lb shrimp, peeled and deveined⠀
1 Tbsp avocado oil, or olive oil⠀
sea salt and fresh ground black pepper, to taste⠀
2 med-large, crisp zucchini, chopped ⠀
1 red bell pepper, sliced ⠀
1 yellow bell pepper, sliced ⠀
Homemade Stir-Fry Sauce:⠀
1/4 cup Bragg's liquid aminos, low sodium soy sauce, OR coconut aminos(my favorite is the coconut aminos)⠀
1 Tbsp raw honey⠀
2 cloves fresh garlic, grated⠀
1" fresh nob ginger, peeled and grated⠀
1 tsp chili flakes (optional)⠀
1 Tbsp sesame seeds⠀
⠀
Instructions: ⠀
In a small bowl, whisk together all sauce ingredients.⠀
Heat oil in a large skillet or wok over medium-high heat. Add in the shrimp then cook, stirring occasionally until cooked through, about 3-4 minutes.⠀
⠀
Stir in the veggies and cook for 2-3 minutes more.⠀
Pour your sauce over top and stir to coat the shrimp and veggies.⠀
Serve immediately over brown rice, cauliflower rice, or quinoa.⠀

Keep refrigerated in air tight containers for up to 4-5 days or freeze for up to 2 months.

Loaded BLT for lunch today 😍 Oh my gosh my new summer combo right here 🤤 Toasted sourdough bread + organic bacon + juicy tomatoes + mashed avocado 👌🏻 Does it get any better than that?! ⠀

Can’t wait to steal tomatoes from my stepdad’s garden all summer because nothing completes a BLT like a fresh tomato 🙌🏻 Until then, I’ll be having mediocre tomatoes on my sandwiches 😜 But when you have crispy bacon- who cares about the tomato 😉 I used to avoid bread like the plague- too many carbs oh my gosh!! But today I had this loaded sandwich for lunch + a slice of pizza for a snack this afternoon (gluten oh no 😜) and I’ll probably have a pretty decent sized dinner tonight! The thing is- our bodies need fuel and I had a tough workout this morning so if I’m hungry, I’ve learned it’s better to refuel than starve myself and spend my whole day thinking about my next meal 🤦🏼‍♀️ Do what works for you- I eat healthy 80-90% of the time but I also like to share some pizza with Eli 👌🏻 We got our marriage license today and went for an afternoon wine + small pizza 🍕 Such a beautiful afternoon and I’m just so happy 🤗 Hope you guys had a good Tuesday!! ❤️ ⠀
