I took some inspiration from @frenchfamilyfood and @_myfrenchfoodie who make the most beautiful salads. Mine is no where in their league but it was pretty tasty. It was really simple. Grated carrot, baby plum tomatoes, cucumber, beetroot with grilled halloumi. I poured over a Dijon mustard, honey dressing.

Moving into week 3 and introducing the #immunehealth #supplements and starting the kill phase. I’ve cheated twice on the #Fodmap diet. I can’t lie there’s conflicted opinions in my mind. There’s an awareness that the core issues and cause of poor immune health and #SIBO go beyond just needing a changed diet. I know there are #spiritual and #emotional components to all ‘dis-ease’. Yet I also know part of that is me waking up to a drastic need for self love- which does involve me eating a healthier diet. I’m being tested in my will, in my #discipline and in my desire to get well. That #selflove fosters taking care of my body. It goes well beyond just eating the wrong things as well. It’s the underlying dynamic of #why the wrong things are being eaten. #mindfuleating has been a #blessing and shown me I eat to cover #feelings. It’s been a #habit my entire life. There’s also interesting symbolic concepts we can glean from eating habits. For example sweets don’t only represent having SIBO and pcos ( each crave sweets) it’s literally symbolic for craving sweetness in ones life. Really there are a myriad of lessons we can gather when we look to our struggles and the solutions to them. So onto week three I go.

Lime, prawns & brown rice bowl

This was one of those, 'let's use up all the random bits of veg in the fridge and hope the best' moments. I still need to find an easy lowfodmap satay sauce recipe for times like these so please let me know if you've got a recommendation!

INGREDIENTS 
Defrosted prawn meat 
70g brocolli 
70g zucchini 
70g bokchoy 
125g brown rice (organic sachet)
Peanut oil
Sea salt
Lime juice 
Peanuts to serve (optional)

Place the broccoli in a steamer. Add 1 tsp of peanut sauce to heated pan and toss through prawns. Add zucchini slices to pan once prawns are almost cooked. Add bokchoy to steamer with broccoli and place rice sachet in microwave (I used to just cook it from scratch and this has changed my life). Lately I’ve been looking back on old pictures, wondering if I’ll ever be the same girl again.

It’s no secret that my GI issues have completely taken over my life in every way: physically, mentally, socially. My anxiety is already sky high and I feel my depression creeping back in all the time.
.
I don’t want to isolate myself, but I’m scared of being in public or out with friends. Im scared of the pain, the embarrassment, the unknown.
.
It feels like this is how I will be forever. Logically, I know that’s not true, that’s the depression talking. But it’s been 4 months and I still have no answers. Meanwhile, I avoid social situations as much as possible and every day at work is a struggle to make it to 4:30 when I can go home.
.
I don’t want to live like this. I want to feel normal again. And not knowing when or if that will happen is petrifying.

I started my #fodmap reintroduction phase in Italy and wowowow! Gluten is so yummy!!! But unfortunately I did not tolerate it so well :( Right now I know I’m lactose- and gluten-free... so I’m kinda bummed but also it’s GREAT to know what’s been causing some of this discomfort, and I’m excited to keep reintroducing Fodmaps to get my tummy sorted out!

W końcu coś wegańskiego - caponata. Z bakłażanem (a jak inaczej 🍆?), oliwkami, kaparami i papryką. Z dodatkiem aromatycznej czosnkowej oliwy i tymianku. To taka zmodyfikowana caponata, żeby nie było mi przykro, że nie ma tam czosnku. Tęsknię za pizzą, ale to jest tak smaczne, że dałabym się za to pociąć. Robiłam caponatę dopiero drugi raz, ostatnio na wypasie było z domową foccacią, ale ze jest ban na gluten, to i foccaci nie ma. 🤔 #caponata #eggplant #ibs #fodmap #wegan #sodelicious

Last nights dinner. Back on it after a little break for Easter and to try and work our what’s wrong with my stomach. I’m having to follow a low fodmap diet for 6-8 weeks to try and work out what foods hate me. It’s a massive challenge for me as it eliminates so many foods I eat every day but it will be worth it in the end. Turkey meatza made with 2% fat turkey mince, seasoned with salt and pepper, topped with tomato purée and half cheddar half mozzarella and baked in the oven, served with sweet potato fries from @aldiuk (5.5 syns) and salad with salad cream (1.5 tbsp) and lighter than light mayo (1.5) and lemon juice #swinstagram #sw #onplan #swinsta #positivethinking #fodmap #lowfodmap #slimmingworld #slimmingworldjourney #healthy

This is called “lactose intolerance” and causes bloating, flatulence, abdominal pain, cramps and diarrhoea. Plant milk can be as nutritious as dairy milk, however choose fortified dairy free milk to ensure adequate amount of calcium, iodine and B12 in your diet!
There are so many dairy free milk available such as soya, almond, cashew, oat, hazelnut, hemp and many more. I personally love the taste of hazelnut and oat milk. What is your favourite?

You can’t control these things and that fucks me right off. I’ve got a very rare couple of days off with the wife and I feel horrendous. No motivation, really sore, lethargic, agitated and now as time wears on absolutely furious. She’s gone in the gym, I’m in that much pain I can’t face it. Plus it’s packed. I can’t be arsed with that. Seem to have hay fever or something too so thats getting on me nerves. Why today like? Why not any other fucking day. Fuck this. I’m going in the sea. Maybe that will help. angry as fuck.

Spoke about eating out with intolerances in London on my stories last night and actually we went for dinner at @hawksmoorrestaurants Borough 💫. We had charcoal beets in ricotta (delish), lobster (my friend with garlic butter), porterhouse steak, triple cooked chips, buttered greens, my friend had mac and cheese, then we finished off with the best rhubarb sorbet of all time. SO GOOD. There was also some very nice prosecco and red wine... and maybe an expresso martini. Waiters were great with food intolerances and the decor isn’t too shabby either 💁‍♀️

On this grey Thursday morning I’m throwing it back to my gluten free strawberry pancakes with maple syrup from @wyndhamgrand in Orlando

When we were doing some research before our holiday, the boyf actually found this brunch menu with gluten free pancakes on, so I added it to my list of my must try places!! The pancakes were great, and perfect fuel for walking around the @waltdisneyworld parks!
If you are heading to Orlando, I would recommend for brunch.

I ATE GLUTEN last night 😱 and lived to tell the tale. I’m feeling a little bit burpy and bloaty this morning but other than that I’m fine. This just further proves to me that my gut has come a LONG way since my dark days suffering from extreme IBS C and D symptoms. To be able to eat food like this occasionally, I have healed my gut by eating a high whole foods, plant based and gluten free diet. I will continue to be gluten free as this was a very rare occasion when I decided to brave it as I could have easily had a very bad reaction to this, but I decided to take the risk - 1) because it was George’s cousins 14th birthday and I didn’t want to sit there with fries 2) I’ve secretly been dying to try the new naughty vegan options on the F & B menu. I will be going back to being gluten free though as I don’t like feeling even remotely crappy when I eat, but this was a treat and t was wonderful to be able to enjoy it. Anyway fellow vegans... @frankieandbennys vegan menu is awesome! So many bad treats to choose from. I won’t be rushing back due to my allergies as I was lucky to avoid any gut trouble this time!

Still eating the same breakfasts.. Blueberry protein smoothie jar 😍. 150g @alpro 0% yogurt, 25g iso pro @myproteinuk protein, 30g frozen blueberries, 5g flaxseeds, 5g pumpkin seeds and 10g almonds.. Just going to slowly start to increase the portion sizes now. I say this like I’m being really controlled and organised when in reality I ate a whole Easter egg last night 😏😂.. maybe don’t take any advice from me when it comes to reversing out of a fat loss phase! •

What a busy week already! Back to work and already done a parents evening but its wiped me out. Luckily dad cooked for me last night and I had this Sicilian chicken from @simplycookcom which was great! It had a very strange addition of charred lettuce which I'd never thought of doing before! Only two more days of work before the weekend 🙈

A low FODMAP is NOT a gluten free diet.

Quick recap

FODMAP is an acronym for four groups of short chain CARBOHYDRATES, or ‘sugar’ molecules found naturally in a variety of foods such as fruits, vegetables, grains, legumes and milk products, or as food additives.

Eindelijk is het paasweekend er! 
Voor diegene die nog wat inspiratie nodig hebben voor de paasbrunch is dit misschien wel het ideale gerechtje.
Dit gerecht tover je op tafel in een 20 tal minuutjes en hoef je zelf helemaal niet voor te koken. Ga langs bij een Lidl in jouw buurt, want zij hebben nu een groot assortiment aan delicieux producten waarmee je een super lekkere plaattaart kan maken. ----------------------------------------------------------------------------
Plaattaart/ pesto/ burrata/ bresaola
----------------------------------------------------------------------------
Voor 4 personen: - 1 rol bladerdeeg
- 150 gr pesto calabrese ( deluxe Lidl )
- 200 gr burrata
- 10 zongedroogde tomaatjes
- 8 sneetjes bresaola
- 50 gr rucola

Bereiding: - Verwarm de oven voor op 220 graden. ( of volgens de verpakking van jouw bladerdeeg )
- Rol de bladerdeeg open en en prik gaatjes met een vork in het deeg. Start 2cm van de rand, zo krijgen we ook nog een mooie korst.
- Besmeer de binnenste zijde rijkelijk met de pesto.
- Plaats 25 minuten in de oven ( of zoals de verpakking aangeeft ) - Haal de plaattaart uit de oven en leg op een rooster zodat die onderaan niet wak wordt.
- Beleg nu jouw plaattaart met de zongedroogde tomaat, bovenop de burrata, sneetjes bresaola en afwerken met rucola.

Carrot-Coconut Cakebites
Low FODMAP
🥕🥕🥕🐰 Carrot Cake ist immer lecker und einfach zu machen. Und jetzt ist ja auch bald Ostern und da passt das noch besser. Aber eigentlich passt Backen mit Karotten ja immer.😉 Ich wollte allerdings keinen ganzen Kuchen, sondern nur einen Snack für Zwischendurch. Also habe ich ein Rezept von der lieben @dietina |Werbung da Nennung|unbezahlt| abgewandelt und aus ihrem Carrot Cake meine Carrot-Coconut Cakebites gemacht. Wie immer habe ich die Zutaten auch angepasst und auch kein Frosting gemacht. Die Bites sind super lecker, nicht zu süß und mit einem Haps im Mund.😋 🥕
👉🏼Rezept
Den Backofen auf 160°C Ober- Unterhitze vorheizen. 🥕🐰
200g Möhren raspeln
80 g Dinkelmehl
50 g brauner Rohrohrzucker
1 Päckchen Vanillezucker
1 gestrichener TL Zimt
Etwas abgeriebene Schale einer Bio-Orange
5 g Backpulver
1 Ei
80 g Kokosöl geschmolzen
50 g Kokosraspel (in ihrem Rezept sind gemahlene Mandeln, ich hatte keine, also habe ich Kokos genommen😉)
🥕🐰
Alle Zutaten in einer Schüssel mit dem Rührgerät kurz verrühren. In eine Springform Durchmesser 25 cm geben und 30 Minuten backen. Fertig! 🥕

Fiber comes from not only the spinach and strawberries 🍓 but also the pecans and sunflower seeds. Nuts and seeds add protein, healthy fats and fiber 🥜 Feta is an aged cheese which means is low in lactose 🙌🏻

Please ignore my awful chopping board (really should throw it away) but lots of you asked about these brownies I made for Rob’s birthday! I adapted the BBC recipe I’ve linked below, using @freeefoods flour to make it gluten free, swapping out the 50g milk and 50g white chocolate for 100g marzipan chocolate and 100g glacé cherries, adding in vanilla extract and a large but weak shot of coffee to give the gluten free flour some more liquid. Oh plus flaky salt on top, obvs. They went down a storm! You could swap out the marzipan and cherry additions for more dark chocolate to make them lower in FODMAPs too 🍫
