140g spelt flour
4 eggs
200ml whole milk

210 degrees celcius, bottom shelf, 15 minutes in hot oil

Today I tried using groundnut oil in the pan and they have come out looking good!👍 5 going in the freezer 😁

Havent had a roast in forever 😍

Happy Sunday! Started today off with a breakfast taco 🌮 😋 @vitalfarms egg scrambled with bell pepper & mini heirloom tomato, arugula, @sietefoods sprouted bean dip, crumbled bacon, green onions, and avocado 🥑 all on siete’s cashew flour tortilla.  This was definitely one of the best breakfast tacos I’ve made yet 😍 off to the gym soon then hanging with my dad for Father’s Day!

#Keto breakfast! Nom nom! Fell off the wagon yesterday... we went to Korean bbq with my niece and I ate rice 🤦🏻‍♀️. But I didn’t eat for the rest of the day. We went to a graduation party and I had two sugar and carb free spritzers!

Mama had a dentist appointment and I got a crown 👑 removed yesterday! OMG! My mouth is still hurting!

One apple has 125 calories and 25 grams of carbs. One large red pepper has 40 calories and 5 grams of carbs. You do the muscle math.

Happy Father’s Day to all the amazing dad’s! Spending today with family... being low-key... and baking some cookies (added in a handful of spinach - the only way to get Emma to eat greens lol).
I used the @simplemills chocolate chip cookie mix and simply blended the wet ingredients with a big handful of spinach then added in the dry mix. So yum! .
Finally did a ‘Sunday Things’ post on the blog - I used to do them every Sunday and since Jordyn was born it was hard to be consistent. Trying to bring it back every Sunday now! It’s simply a roundup of my favorite finds from lately - mostly recipes from other bloggers that I discover! Hope you enjoy:

Happy Father’s Day! Convert your dad to a vegan so he can live longer and healthier with you - with these vegan blueberry scones. They were so good we honestly didn’t even open the jam. Check recipe below: •
Ingredients:
2 cups flour
1 tbs baking powder
2tsp sugar 
1tsp salt 
1/4 cup + 1tsp coconut oil 
1 cup reduced fat coconut milk 
1 cup blueberries 
zest + juice of 1 lemon 
Method: 
Mix four, sugar, baking powder, salt in a bowl with the liquid coconut oil. Mix well there should be clumps. Once mixed well add blue berries and lemon zest + juice. Mix together then add the coconut milk. Mix well with spatula (I used a fork) to form a dough ball. Let sit in fridge for 15 minutes on lightly floured surface. 
Preheat oven to 400. Place parchment paper (I used aluminum foil greased with coconut oil) on tray. *15 minutes later spongebob voice* 
Take ball out of fridge.  Cut into 6 triangles. Bake for 40 minutes. Eat warm !!! •

Ich musste heute einfach raus...raus an die frische Luft, in die Natur und die Sonne spüren. 
Ich Liebe es einfach aktiv zu sein gemeinsam mit @markohier . Heute 2 Fliegen mit einer Klappe geschlagen 😜 , sonntagsausflug trifft auf tägliche Sporteinheit 😊. Einfach eine perfekte Kombi für mich. Mich macht Sport einfach Glücklich,  zufrieden und entspannt.  Eine Wonne für mein Wohlbefinden.  Sport ist meine Therapie...mein Ausgleich und Alltagsventil.

Tofu Vegetable Lo Mein by @cookingforpeanuts 🌱🔥 A delicious opportunity to make the most of all those veggies sitting in your fridge!⠀

Recipe⠀
Cut 1-14oz block of extra firm tofu (pressed and dry) into about 3/4-inch cubes and bake in oven on lined baking sheet 400F until golden and slightly crispy, about 20 minutes. Cook 4oz wide Lo Mein noodles as per packet directions. Whisk sauce: 1/3 cup low-sodium tamari or soy sauce, 1 tbsp + 1 tsp maple syrup (or to taste), 2 tbsp rice vinegar, 2 tbsp garlic chili sauce, 2 tbsp minced ginger, 1/4 tsp cayenne, 1 tsp sriracha (optional), salt to taste. Once tofu is ready, heat skillet and add sauce. Cook until sauce starts to bubble. Add baked tofu and 4 sliced scallions and keep stirring while heating. Quickly add cooked Lo Mein noodles and stir for another minute or so until heated through. Remove from heat and add cooked veggies of choice. (@cookingforpeanuts added some blistered bell pepper and spinach.) Fold in 1/4 cup chopped roasted peanuts. Add a few squeezes of fresh lime.⠀

Recipe:

Cook pasta as per packet directions. Whisk: 2 cups plant milk (I like using oat milk), 1 tsp garlic powder, 1/2 tsp dried thyme, 2 tbsp tapioca (or arrowroot). Heat in saucepan while whisking. Once warm, keep whisking and add 4 tbsp nutritional yeast. Continue to cook and whisk until sauce almost reaches desired thickness. Reduce heat to low and whisk in 1 to 2 tsp mellow miso (or to taste) until all dissolved. Add salt and black pepper to taste. Stir in some chopped greens and mix until greens just wilted. Remove from heat. Mix with about 3 to 4 cups cooked pasta and about 3/4 cup cooked white beans, or preferred amount. Top with fresh thyme leaves and red chili flakes...yum!

Hari ini aku nyobain mie instan konyaku merk Fit Mee.. mie ini terbuat dari konyaku sehingga sangat lebih rendah kalori, cuma ada 60 kalori aja sebungkusnya, makanya mie instan ini aman untuk yg lagi diet

Dari segi kemasan keren bgt sih.. (geser kiri untuk lihat kemasannya) jadi nettonya 92 gr, dalemnya ada mie konyaku (jenis mie bening) bumbu, sayur kering, bawang goreng, dan cabe bubuk.. lengkap bgt, dan bumbunya gede jadi kaya akan bumbu gitu 👍 cuma harganya mmg lebih mahal sih yakni 18rb sebungkusnya, tapi ya emg ga sama sih sama mie instan biasa, lebih healthy jadi harga segitu wajar aja 🙂

Cara masaknya sama persis kaya indomie, aku ttp tambahin sayur dan telur biar nutrisinya lebih lengkap.. dari segi rasa kalo mie nya sih hambar gitu hampir kaya soun deh.. tapi bumbunya serius enaaak ☺️, creamy gitu rasa soto banget asli dan ga bikin haus, beda deh kaya kalo kita habis makan mie instan biasa.. ga nyesel sih beli ini, karena bnr2 ngobatin rasa rindu mie instan dan aman bgt buat diet, bisa dibilang ini recomended deh 😉👍

Sunday afternoon feels - after a lovely weekend of not thinking about syns or calories 😂

No more half and half Emily, I’m fully riding the on plan band wagon. Meals are planned, thanks to @spicentice for making it so easy 👏🏻 and you can get 20% off with code EMILYP20 too, food shop done, even if I have missed half of the stuff we actually needed in my hungover state 🤦🏻‍♀️😂 but no excuses! We go away in 10 weeks and I want to feel my absolute best. .
