Starting a 30 day sugar free challenge. No artificial sweeteners, no unrefined sugars like honey or maple syrup either, only fruit in its natural form will be allowed. I started intuitive eating around 6 months ago and began having sugary snacks once a week, eventually a few times a week, until it became everyday. While I don't believe in restrictive diets in order to control my sugar addiction I find this necessary. This breakfast is lemon oat pancakes with fruit, coconut and pecans. Who wants to take the sugar free challenge plunge and join me!?

Rainbow Veggie Collard Wraps
These wraps are the perfect summertime recipe. By @eatwithclarity
~
4 large collard leaves
1/2 cup hummus (any variety, store bought or homemade)
1/2 cup uncooked quinoa
1 cup shredded carrot
1 cup shredded cabbage
1 avocado
1/2 cup microgreens or sprouts
1 batch lemon tahini dressing
Dressing:
1/2 cup tahini
3–6 tbsp water (will depend on the consistency of your tahini)
1/2 tsp garlic powder (or freshly minced garlic)
Juice from 1 large lemon
1/4 tsp sea salt (or to taste)
Black pepper to taste
To make the dressing, simply whisk all ingredients together in a small bowl until your desired consistency forms.
Cook quinoa according to package instructions (using a 1:2 ratio of quinoa to water. Or use veggie broth for more flavor). Wash and dry the collard leaves. Cut off the very bottom of the stem (where it meets the main leaf) and carefully slice off the top of the stem. Add roughly 2 tbsp of hummus to the inner part (the outer part is darker if you’re unsure) a leaf and spread it out along the stem. Add the cooked and cooled quinoa, 1/4 of the veggies, avocado, and microgreens if using. Feel free to also add the dressing to the inside of the wrap instead of just the outside. Fold the bottom and top of the leaf in about 2 inches on top of the filling (see pictures). Now, take the one side that hasn’t been folded, and roll it on top of the filling. Tuck it in to keep the filling secure and keep rolling until you get to the end. Cut the wrap in half and enjoy!

MK, who here loves them some MFN dessert? 🙋🏻‍♀️🙋🏻‍♀️🙋🏻‍♀️🤤🤤🤤 I LOVE desserts and tend to battle a major sweet tooth that sometimes even my delish superfood shake just wont fix. The thing is tho, that for the last month I’ve cut out carbs and sugars which means no more monthly rendezvous with my beloved pints of bluebell ice cream or cupcakes from the pizza shop down the road. SO... what’s a girl to do? Definitely NOT give up sweets, I had to scour Pinterest and get my ass in the kitchen to whip up something delicious AF that ALSO aligns with my goals and nutrition.

I tried different recipes and different variations and here it is, the recipe for my perfect cinnamon & cream cheese frosting mug cake:

CAKE RECiPE:
•2Tbsp Kerrygold unsalted Butter, melted
•6Tbsp finely milled almond flour
•1Tbsp granulated swerve sugar substitute
•1 egg
•1/4tsp baking powder
•1tsp vanilla
•1/4tsp cinnamon
—> stir, stir, stir...then microwave for 90 sec.

FROSTiNG RECiPE:
•1oz cream cheese, softened
•1Tbsp Kerrygold unsalted butter, melted
•1Tbsp granulated swerve sugar substitute
•1tsp vanilla
•1/4tsp maple extract
—> stir, stir, stir...then you can either put it in the fridge to cool, or pour over immediately like I do and top with fresh raspberries!

Also, when my mug cake is done cooking I take it out of the mug and place it onto a plate where I cut it in half. I then use the same mug I cooked my cake in, to make my frosting. This way I have less clean up afterwards... also it feels like SO much more cake when it looks like you’re eating 2 slices instead of mindlessly eating from the mug.

This mug cake is delish as well as grain-free and sugar-free BUT it still packs some calories so I don’t suggest eating this every single day (for 3 days in a row like I may or may not have done). This however IS a better option than your typical slice of cake or the pints of bluebell I would down in one sitting. Truth be told the way I workout and how consistent I am, the calories from this cake did not effect me BUT it’s still best to have in moderation.

I hope you love it as much as I obviously have! 🤣❤️

• 2 ripe bananas
• 1 1/2 cups #alpenmuesli no sugar added muesli
• 1/3 cup almond butter
• stevia-sweetened chocolate (my fav is @lilys_sweets_chocolate)
• sea salt sprinkled on top (that is not optional people. it’s a necessity)

just mix it all together and bake at 350 for about 15-18 mins. then sprinkle with sea salt. and definitely enjoy one warm, like, right away! #sponsored

Pulverized the mixture and powdered the chicken breast like Scarface powdered his nose🤧 let the grill do the rest! Tired of your food tasting the same or bland, walk down that isle called "ETHNIC" in the grocery store and boom! Today's lunch! 🥰 Toast champignon with asparagus tips. 💚💚💚
It is said that eating asparagus may help ease a hangover... well I'm not sure about that 🤷🏽‍♀️🙈 But hey, it's worth giving it a try! °•°•°•°•°•°•°•°•°•°•°•°•°•°•°•°•°•°•°•°•°•°•°•°•°
To make this crunchy mushroom toast all you need is 3 slices of toast (I used #knackebrod), your favorite mushrooms, 1 small chopped onion, 6 green asparagus tips and some fresh lemonjuice. I had some leftover salad so I added this too.
Roast or pan fry the asparagus tips and sprinkle some lemon juice over them. In a different pan, glaze the onions and add the mushrooms for a few minutes. Divide over the three slices of toast. Bon apetit! 🍴

4 large collard leaves
1/2 cup hummus (any variety, store bought or homemade)
1/2 cup uncooked quinoa
1 cup shredded carrot
1 cup shredded cabbage
1 avocado
1/2 cup microgreens or sprouts
1 batch lemon tahini dressing
Dressing:
1/2 cup tahini
3–6 tbsp water (will depend on the consistency of your tahini)
1/2 tsp garlic powder (or freshly minced garlic)
Juice from 1 large lemon
1/4 tsp sea salt (or to taste)
Black pepper to taste
To make the dressing, simply whisk all ingredients together in a small bowl until your desired consistency forms.
Cook quinoa according to package instructions (using a 1:2 ratio of quinoa to water. Or use veggie broth for more flavor). Wash and dry the collard leaves. Cut off the very bottom of the stem (where it meets the main leaf) and carefully slice off the top of the stem. Add roughly 2 tbsp of hummus to the inner part (the outer part is darker if you’re unsure) a leaf and spread it out along the stem. Add the cooked and cooled quinoa, 1/4 of the veggies, avocado, and microgreens if using. Feel free to also add the dressing to the inside of the wrap instead of just the outside. Fold the bottom and top of the leaf in about 2 inches on top of the filling (see pictures). Now, take the one side that hasn’t been folded, and roll it on top of the filling. Tuck it in to keep the filling secure and keep rolling until you get to the end. Cut the wrap in half and enjoy!

Egg white oatiessss 🍌
Had such a DAY yesterday. Chris came with me to F45 Hollywood (aka my favorite class but arguably one of the most energy consuming). We then went to the yankee game (a part of my birthday gift) and had awesome seats and awesome weather. Finished the night at our fav restaurant with great friends & great food (& a strong wine buzz tbh) 🌻🍷

It’s days like this that I remember there so much more to life than dieting and worrying about our weight. Make memories. Drink wine. Go out with friends. Eat two different pasta dishes in one meal (I couldn’t decide so I got both 🥺). Do what you love with the people you love without hesitating for even a second about how it will affect your body. ♥️ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
