We spent the weekend in Rouen attending an event called Armada 🇫🇷 It’s about the tall ships from all over the world moored along the banks of the Seine. You can visit every ship, meet the crew and on the last day enjoy the most amazing parade when the ships are leaving together 🛳⚓️😍 You can check my stories to get a bit of idea what it was all about. Along all of the attractions (concerts, fireworks, exhibitions), there were also lots of food stands with not always healthy choices 😁 I indulged a bit but now I am so happy to be back to my routine. My dinner bowl today is: roasted sweet potato chunks (seasoned with nutmeg, cinnamon and cayenne pepper), hard boiled egg (cooking time 7 minutes), steamed asparagus, small mozzarella balls, tomato and raspberries on a cloud of greens 🌿🍅🤗 Everything will be sprinkled with balsamic vinegar just before eating 🥢🤩 I hope you all had a beautiful weekend 😙 —

INGREDIENTS
1 lb. baby golden potatoes
1/4 cup olive oil
2 cloves garlic, minced
2 tablespoons fresh parsley, minced
1/2 teaspoon salt
1/r teaspoon black pepper
Truffle oil for drizzling

1. Place the potatoes in a pot with cold water, bring to a boil and cook until fork tender.

2. Using the bottom of a plate or pan, smash the potatoes slightly, until ehy are cracked but still remain in tact.

3. Place on a parchment paper lined baking tray and season with salt, pepper and olive oil.

4. Bake on 450° for 15 minutes on each side or until dark golden brown and crispy.

5. While still hot, toss the potatoes with garlic, parsley and truffle oil.

Just a #kitchenhack I thought I would share.  Every week after I buy fruit, I soak it in a sink full of cold water with about 1 cup of vinegar for approximately 10 minutes.  Then rinsed well with cold water again.  This gets rid of a lot of the dirt and residue on fruit and will actually start to loosen wax from apples (if you rinse the apples in hot water, it will come off completely.  I also believe this helps prevent berries from getting mouldy.

I just just started adding blueberries to my morning yogurt (with a littĺe Summer Berry or Chocolate Truffle Sweet Dip Mix) and I wash them the same, but they are a bit of a pain in the butt to fish out of the sink once they are washed.  Today I did a #kitchenexperiment and placed them in my collander in the water to try to contain them.  It worked!  I think only about 7 escaped.

This works for veggies as well!

I received a lot of messages about: how to stay motivated and consistency. Here's what happen with us, humans.

The 5 stages of habit building:

1. You decided to adopt a new habit, start changing your life and stop making excuses. .
•motivation is high;
•you get some initial results.

2. The excitement turns into boredom. •You realize the repetitive nature of habit;
•Your motivation starts to fall down.

Now you start to rely on willpower and discipline - focusing on the long term result, your main objetive - you start missing workouts and meals.

You realize you are far from your objetive, doens't look like you are going to achieve your goal and the amout of repetition its required to become sucessful.

Most people quit because of the BOREDOM, not failure.

Then you keep up working out, preparing your meals, day after day, until you reach stage 3..

3. Boredom turns into indifference.

The habit starts to be build up, you start not giving a f*** about your emotional state and you just overcome the biggest obstacle.

You keep going until enter the stage 4.

4. That indifference turns into enjoying the process.

The habit become part of your lifestyle because you see the results and the progress you made until... .
5. The habit may become part your identity.

So choose wisely what do you want in your life as a habit. They will rule who your are and what you Will achieve.

Coco's is a place which is a proper treat for me however is also the opposite when it comes to my IBS and dairy intolerance. The cream, icecream, milk and cheeky reeses milkshake which goes with this waffle causes problems, but I'll go anyway.. so obv the waffles are gooood.

➕➕INGREDIENTS
50 grams flax seeds, ground into a meal
1 1/4 cups shredded coconut
1/4 cup cacao
Pinch good-quality salt
6 medjool dates, pitted
2-3 Tbsp rice malt syrup

CARAMEL LAYER
2 cups medjool dates, pitted
1/2 cup hulled tahini OR peanut butter if tolerated
1/4 cup rice malt syrup
1/2 tsp good-quality salt
1/4 cup coconut condensed milk
.
CHOCOLATE TOP
100grams vegan dark chocolate
1 Tbsp coconut condensed milk
.
⏩⏩Instructions

1. Add flax meal, coconut, cacao and salt to a high-speed food processor. Pulse until combined. Add dates and 2 Tbsp rice malt, and pulse to forma sticky base. Add more rice malt is needed.
2. Press mixture into the base of preferred cake tin (I used a 15cm square one)
3. Add all caramel ingredients to a high-speed blender, and blend until very smooth. You will need to scrape the sides at least one.
4. Pour over your base layer, smooth with a hot spoon, and set in the freezer while you make the choc top.
5. Add chocolate and coconut condensed milk to a heat-proof bowl and melt over a pop of simmering water. Once melted pour onto of caramel base.
6. Allow to set in the freezer for atlas 4 hours. To serve, remove from freezer and cake tin. Use a very hot knife to slice into desired serves. Store in an air-tight container, and ENJOY! .

We spent the weekend in Rouen attending an event called Armada 🇫🇷 It’s about the tall ships from all over the world moored along the banks of the Seine. You can visit every ship, meet the crew and on the last day enjoy the most amazing parade when the ships are leaving together 🛳⚓️😍 You can check my stories to get a bit of idea what it was all about. Along all of the attractions (concerts, fireworks, exhibitions), there were also lots of food stands with not always healthy choices 😁 I indulged a bit but now I am so happy to be back to my routine. My dinner bowl today is: roasted sweet potato chunks (seasoned with nutmeg, cinnamon and cayenne pepper), hard boiled egg (cooking time 7 minutes), steamed asparagus, small mozzarella balls, tomato and raspberries on a cloud of greens 🌿🍅🤗 Everything will be sprinkled with balsamic vinegar just before eating 🥢🤩 I hope you all had a beautiful weekend 😙

A little twist on a favorite: “Mexican Shakshouka” made with tomato sauce, onions, jalapeño, taco spice, melted vegan mozzarella, avocado, and cilantro.

To make, I sautéed some onion and jalapeño in olive oil and then added plain tomato sauce (diced tomatoes would work as well). I mixed in some taco seasoning and then mixed in @miyokoscreamery mozzarella. Crack in the eggs, cover, and cook for 4-5 min until whites of eggs have set. Top with avocado slices, extra jalapeño if desired, and fresh cilantro.

I’m 380 miles from my dad this Father’s Day 😩 Sending him love (and gf/df banana bread) from Memphis today 💕 I just hope the chocolate chip banana bread makes it home in one piece ✈️

4 cups of frozen mango, chopped
14oz full fat coconut milk

Instructions:
1. Add all ingredients into a food processor and blend until smooth
2. Pour the ice cream into any container that has a lid
3. Cover and let sit in freezer for about 3 hours

Leftovers for breakfast 🙌🏻 Had another brunch plate over here because brunch is the best meal of the day 😜 Aka I’ve been sleeping in so breakfast becomes brunch haha 😉 Leftover maple paleo donuts paired with some savory goods for the best of both worlds 😎 -

Finished off the last of these donuts this morning- they were such a good snack + breakfast the last few days 🤗 I’d warm them up in the microwave for a few seconds so the icing melted just a little bit 🤤 Soooo tasty!! Paired with mashed avocado + a crispy egg- you can’t go wrong 💯 Spent the morning taking it easy, it’s rainy again over here so I drank all the coffee + did some journaling + added these donuts to the blog 😍 Now we’re off to church ⛪ and hoping the rain clears up so we can do some outdoor activities this afternoon! Hope you guys have a good Sunday 💓 -
